Three magic ingredients to set your taste buds to dancing.
Three.
You can guess what they are….
Bananas. {check}
Chocolate Ice Cream. {check}
But what’s the third?
Any guesses?
Okay…I’ll tell you.
The magic ingredient is Banana Bread.
But not just any banana bread….the best banana bread….tweaked a bit.
You’ll want to use this recipe.
Because I can’t stop tweaking even the best recipe…here are my adjustments for this time.
- Instead of butter I used organic Coconut Oil

- In addition to the vanilla, I added 3/4 teaspoon of coconut extract.
- Instead of the usual sugar, half of the sugar was low glycemic Organic Coconut Sugar
.
- Plus…2/3 cup of semi sweet chocolate chips were tossed on top of the batter in the pan (drag a knife through the chips to work them down just a wee bit). Note: you might like these Fair Trade Certified Premium Chocolate Drops

Here’s how to assemble this delicious Chocolate Banana Magic Sundae.
On a dessert plate, place a thick moist slice of banana bread for the base, add a scoop or two of chocolate ice cream (we like Breyers), and top with ripe sliced bananas. If you wish, drizzle some dark chocolate syrup over the chocolate banana goodness.
Next…allow the ice cream to melt just a little. Pick up your fork for a delicious indulgence.

The day I baked the banana bread was sweltering and since my husband loves ice cream I asked if he wanted ice cream on his slice of banana bread. History was made. We have a new favorite, slightly more nutritious, dessert in our repertoire now.

I’m a huge fan of banana bread with chocolate in it. Kudos for the coconut oil! I also use whole wheat in mine…love the nutty taste. Your sundae idea looks heavenly.
