Hospitality is my thing.
There isn’t anything I enjoy more than having people over for a meal.
And hosting weekend guests… that’s even more special for me.
It’s so fun preparing for them, making sure their room is cozy, planning out all the meals for their stay, and making the table look inviting.
Probably my favorite meal to plan is breakfast. Especially as most of us hurry out the door in the morning with something like a slice of toast or a hard-boiled egg and a cup of coffee.
My goal is to make a scrumptious warm breakfast my guests can linger and enjoy as they start their day.
A favorite on our breakfast menu is hot and delicious Belgian waffles. Mmmm… so good.
We love them smothered in melting butter, heavily sprinkled with walnuts, and drizzled with the amazingly delicious Don Victor Honey. Seriously, it doesn’t get any better!
I have a wonderful waffle recipe to share with you, so you too can make breakfast extraordinary.
If you’re concerned that this is one of those meals that will send your blood sugar through the roof only to come crashing down later… that just isn’t the case. Instead, this is a breakfast that stays with you and is particularly great for those days when you take your guests to see the sights in your area. (Be sure to serve some bacon or scrambled eggs for the protein lovers at your table as well.)
What makes it so good?
First of all… it’s sweetened with yummy raw Don Victor Comb Honey. Honey that hasn’t been heated is filled with antioxidants called phenolic compounds. Antioxidants help to protect your body from cell damage due to free radicals. It contains phytonutrients which provide anti-inflammatory benefits to help you maintain good health. These valuable nutrients are unique to raw honey and disappear when honey is heavily processed. Honey is easier to digest because of all its important enzymes and it’s lower on the glycemic index than sugar. Plus, it’s sweeter, so we eat less. Doesn’t that make you want to cheer for honey?
Second… good fats are key to a healthy breakfast. If you skip all the fat you can be sure that the meal will not have the staying power for the day and you will experience a blood sugar drop. That’s why there’s a whole stick of butter in the waffle mix recipe and why we slather on plenty of butter, and top it with a generous serving of walnuts which also provide necessary Omega 3’s.
Light and Fluffy Waffles
Ingredients
2 cups all-purpose organic flour
1/2 cup organic cane sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups milk
1 tablespoon vanilla extract
2 large eggs, separated, plus 2 additional egg whites
1 stick butter, meltedPLUS these toppings… softened butter, chopped walnuts, Don Victor Honey
Note: you will use 4 eggs… 2 egg yolks mixed with the milk, and 4 whites to be whisked later. (And yes, you will have 2 yolks leftover to feed to the dog or mix into your scrambled eggs.)
Directions
- Preheat your waffle iron.
- Sift together flour, sugar, baking powder and salt in a large bowl. In a separate bowl, whisk together milk, vanilla, and 2 egg yolks. Pour over the dry ingredients and very gently stir until halfway combined. Pour in the melted butter and continue mixing very gently until combined.
- In a separate bowl using a whisk (or a mixer), beat 4 egg whites until stiff.
- Slowly fold them into the batter, stopping short of mixing them all the way through.
- Scoop the batter into your waffle iron in batches and cook according to its directions. (We cook our waffles on high until they quit steaming so they are the perfect combination of tender and golden crisp.)
- Serve immediately with softened butter, walnuts, and Don Victor Honey.

And here’s a few tips….
- Don’t worry if you have leftover batter. Just place it in a covered container in the fridge so you can enjoy fresh hot waffles the next day.
- This also means that you can mix up your batter the night before and refrigerate it to make serving time even more quick in the morning.
- And because waffle irons are inexpensive… purchase another one or two so your guests can have fun making their own waffles. After all… we started to love waffles because of the make-your-own option we enjoyed when staying in hotels.
Presentation is everything. That’s my motto when it comes to entertaining. It’s those little things that make a difference and help your guests feel spoiled.
Take a dessert plate and load it up with walnuts and then heavily drizzle Don Victor Comb Honey all over the nuts. If you wish, add a chunk of the honeycomb, which comes in the honey jar, to the center of the walnuts so your guests can enjoy a honeycomb treat as well. I love scooping honey-laden nuts onto my waffles. Yum!
You could also serve a plate of nuts and honey and honeycomb along with brie and crackers for a before dinner appetizer. That is pure bliss!
You may be looking at my photo and wondering why my honeycomb looks like a blob of honey in the center of this beautiful plate of honeyed nuts. Usually storing honey at room temperature is ideal. Well… silly me… even though we’ve had such wonderfully mild days where the furnace rarely comes on… it still gets cold at night… when the furnace doesn’t come on. And because my cupboard is on an outside wall it gets cold. Honey has a tendency to crystallize in colder temperatures and my honey did crystallize a bit which looks like this.
Because I wanted to drizzle the honey on the waffles for a pretty presentation, I heated some water to hot… but not boiling and placed my jar of honey in it. I repeated this several times because I needed to take photos while the sun was shining. After a fair amount of time the honey ‘melted.’ Because I wanted you to see the honeycomb, I placed it in a clean mason jar and floated it in very warm water. Although it didn’t technically melt… it sort of turned into a blob. Patience is the key to everything… especially honeycomb presentation. So I am sorry that this image isn’t beautiful. However… it didn’t change how wonderful it is to enjoy honeycomb on nuts and waffles one little bit. It’s still an amazing treat!

Light & Fluffy Waffles
Preheat Waffle Iron
In a large mixing bowl whisk together…
- 1 1/2 C Milk
- 1 T Vanilla Extract
- 2 Egg Yolks (reserve 2 egg whites, plus 2 more whites for later)
Slowly add the dry ingredients to the wet ingredients.
Melt 1 Stick of Butter.
Gently mix in the melted butter.
In a medium mixing bowl, whisk by hand or use a mixer, beat 4 egg whites until stiff
Slowly fold egg whites into batter until nearly mixed in.
Scoop mixture onto your waffle iron and cook.
Enjoy hot with softened butter, walnuts, and Don Victor Honey!
**No waffle maker? No problem! Just add a little extra milk and enjoy pancakes.**
