That’s the way brunch was with my good friend when I visited her.

We’ve been neighbors…bicycling partners…walking partners…decorating partners…and she even reminded me of our brief stint as catering partners.  We even dreamed of  being partners in a B&B.

On this particular morning, after spending so many years and miles and miles apart, time seemed to stand still while we enjoyed this delicious brunch she prepared.  Oh my, it was so good!!

I meant to take a photo of the dish when it came out of the oven.  But, in all our chatting I somehow forgot.  At least I got a quick snapshot of my plate and our lovely dining spot.

If you have never made Baked French Toast with Blueberries for your family and friends….make it this weekend.  They will love you for it.

 

Baked French Toast with Blueberries

Baked French Toast with Blueberries

 

Ingredients:

  • 1 16 oz. loaf of French bread cut in slices
  • 4 beaten eggs
  • 2 cups milk
  • 1/4 cup sugar
  • 1 tablespoon vanilla
  • 2/3 cup flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter

Fresh or frozen blueberries, fresh strawberries, whipped cream, and maple syrup for topping.

 

Method:

  • Butter a 9×13 baking dish.
  • Arrange the sliced French bread in the dish.
  • Stir together eggs, milk, vanilla, and white sugar….pour over bread.
  • Combine flour, brown sugar, cinnamon, and butter…sprinkle over egg mixture.
  • Sprinkle the top with blueberries.
  • Bake at 350 degrees for 25-30 minutes or until knife comes out clean.

 

Serving: 

  • Cut into serving size pieces,
  • Plate the warm baked french toast,
  • Arrange strawberries and whipped cream on top.
  • Serve with a creamer filled with warm maple syrup,
  • Set out a side of sausage patties or bacon.

    Oh…the color of my dining room is an off-white. As of right now I’m at my DD’s house, we came to visit her for her birthday; but as soon as I’m home I’ll check the can I have with a little bit and give you the info your friend needs..

  3. I’m not a big french toast fan (the egg-y taste is a total turn off for me) but I do LOVE brunch and every once in awhile I’ll make french toast for my family instead of waffles. Cause I’m nice like that 😛 I think for our next brunch or breakfast for dinner adventure I’ll be using this recipe! Yum!
