We’re in the holiday home stretch.

For those of us in the States, we’re counting down the days to Thanksgiving.  Just 26 from today!

This time of year, I really enjoy pumpkin dishes.  You too?

I make a pretty mean pumpkin pie… but my repertoire of tried and true pumpkin recipes is pretty small.

      You are so welcome!! I’ve got to try your crock pot pumpkin oatmeal, Carrie. Not only does it sound good…but it’s nutritionally loaded, too!

    all canned pumpkin? wish I knew how to get and use fresh pumpkin–I’m not suppose to eat things from cans–naturopath dr. orders! these all look great!

      Glenda…do you cook squash? Cooking pumpkin is essentially the same. Just make sure that it’s not too watery… let it chill in the fridge after it’s mashed well and any extra water will float to the top and you can dump it. Then use the pumpkin the same as if it were canned. You may need to weigh it for ounces if the recipe calls for a whole can. To be extra sure… “Google how to cook fresh pumpkin for pie making.”
