If you have a hungry crew, or kids who play baseball or soccer or lacrosse, this recipe for Italian Sausage and Spinach Soup with Tortellini is sure to please.  There’s nothing like coming home hungry to a hearty soup and thick slices of fresh bread in the springtime.

I like to shop Aldi.  Is there an Aldi in your neck of the woods?  It’s a different kind of shopping experience, but for the most part, I can save money, and get my shopping done more quickly in their small store.  (This is not a sponsored post…just my thoughts.)

Sometime ago, I happened to visit the Aldi website and discovered they have recipes.  Since most of the products I’ve purchased at Aldi are really flavorful, I thought it would be fun to try some of their recipes.  This recipe for Italian Sausage and Spinach Soup with Tortellini sounded great and so we decided to give it a whirl.  It’s not a complicated soup to make, but it does take a bit longer than the 10 minutes indicated to chop all the veggies.  Hmmm…maybe I just need to speed up my chopping abilities.

We have made the soup two times.  The first time, we followed the recipe pretty closely, though we used heaping cups of veggies.   The recipe makes 10 servings.  If your crew is hungry…they’ll be polishing off the pot for sure.   The second time, we doubled the recipe so we could have leftovers.   Yum!

I have just one suggestion for the recipe…  Cook the tortellini after you have begun the final simmering of the soup.  It takes such a little bit of time to cook the tortellini (actually under cook it) and add it to your already simmering pot.

The second time we made the soup, the ingredients were picked up in the supermarket rather than Aldi and the flavor was equally good.   It made sense to us to purchase ground pork with Italian seasoning, not sausages, to eliminate having to remove the meat from the sausage casing.  I’m all about being efficient and one less step is always a good thing.  This time we used larger tortellini, but I prefer  the smaller tortellini for this soup.

If you double the recipe for freezing at a later time, I would portion out the soup you are planning to freeze, before adding the tortellini to the pot, into containers and plan to cook the tortellini fresh and add it to the soup when it is reheated.

I am not a food blogger, but I do enjoy a healthy delicious meal.  Rarely do I think about photographing the meal or dish before preparing it.  Usually what happens is that everyone sits down to eat, and I realize how good it looks and I make them wait while I take some pictures.  It’s a good thing I’m loved.  Yes?  In this case, the soup was dished up and then I had a “V-8 moment” and went for my camera while the meal was being blessed.   These are very candid shots…but you get the idea.  I hope the photos get your mouth to watering. 😉

    I have been wanting soup but thought I was crazy to want soup since its not winter.lol Now I see it is ok so I guess I will have to make some.I guess it’s like that thing about wearing white after labor day.lol

      We eat soup all year long. I especially like soup when I’m working in the garden. A big pot can be cooked up at one time and over the week it can be lunch or supper and I don’t have to think about what I will eat and it nourishes the spirit, too. How is it that soup nourishes our souls as well as our stomach? Hmmm…. So…don’t worry about the season, Betty, throw away those ‘rules’ and enjoy a bowl or three or four of your favorite. What is your favorite, by the way?

    I love soup and I love pasta. Unfortunately, pasta is disallowed and I ‘m not a pork eater. LOL. Pretty much ruled out this one out for me. BUT thank you for giving me “permission” to break the rules on when to have soup. Yup, I fail to fix it or request it during summer months even though I love soup!! How silly, huh!? I think I’ll put it on the menu for this weekend, though….since we’re talking temps in the 30’s it doesn’t feel real ‘daring’. LOL
