I have such a tendency to over complicate things.  Just ask my husband.  But, I am learning that the easier I make it for me… the more relaxed I am when I have guests over… and the more fun we all have.  Which makes these tarts such a great treat to serve.

Even if it is Valentine’s Day, don’t stress about decorating.

One of the easiest things you can do is to purchase a potted miniature rose and place it in the center of your table.  Or… stop at Aldi, like I did, and purchase a bunch of flowers for just $3.99.  Mine are mini carnations.  I have never seen such a lovely powder pink with blossoms like this.  At first I wasn’t sure it was a carnation because the flower was so different.  Isn’t it gorgeous?

Arranging flowers can be a challenge.  Here I took a single serving silver teapot and attempted to cut the stems so the flowers were all about the same height to form a pretty mound of pink.  Choosing one flower variety makes it super easy, there isn’t much arranging that is needed and it packs a pretty punch too!

For this little vignette I took out my pretty napkins that my friend gifted me for my birthday which you might have seen on this fall tablescape.  I love the lace and they look perfect for Valentine’s Day.  Often when I have friends over, I splurge on pretty napkins, like these. I no longer live near a Wegmans where I could always depend on finding something perfect.  TJ Maxx and Tuesday Mornings are also good paper napkin sources.  I keep my eyes open for them throughout the year, because they’re also fun to give as little hostess gifts.  Everyone loves a pretty napkin.

I’m stuck on the idea of having friends for breakfast.  It really can be an easy no-fuss meal.  I love serving quiche or breakfast casseroles.  They’re easy to put together and all they require is baking.  Plus, they will pair wonderfully with the mini fruit tarts.

Dainty Envelope Fruit Tarts

Supplies

  • Cookie Sheet/knife/tiny bowl/spoon/parchment paper/scissors

Ingredients to Make 4 Tarts

  • One refrigerated pie crust (or make your own)
  • Fresh or semi thawed frozen peaches
  • Fresh raspberries
  • 1/2 teaspoon flour
  • 1 teaspoon sugar
  • sparkling sugar (Optional/I didn’t use it, but wish I did.)

Method

  • Set your oven to 375 degrees
  • Lay your pie crust out flat.
  • Cut the pie crust into quarters with a knife.
  • Create a pattern as shown and cut away the extra.

  • With the leftover pie crust cuttings, hand cut individual hearts.

  • Lay your prepared pie crust envelopes on a baking sheet (parchment paper optional)
  • Arrange your fruit as shown.  Because my raspberries were quite large, I used a sharp knife to cut them in half.
  • With a teaspoon, sprinkle the flour/sugar mixture over the fruit.

  • Prepare the fruit envelope by closing the flaps over the fruit. Start with the sides, finishing up with the bottom flap.  I wanted to make sure that my flaps stuck together, so I wet my finger under the faucet and dabbed it on each of the flaps to “glue” them together.
  • Finish by adding a heart to each envelope.  Again, I wet my finger and lightly pasted each heart to the envelope.

  • Lightly sprinkle baking sugar or sparkling sugar over your mini fruit tarts.
  • Place in 375 degree oven and bake for 12-14 minutes.  Keep an eye on them so that they don’t over brown.
  • Place on a cooling rack. (Tarts may be made a day ahead.)
