For summer gatherings I always enjoy lighter fare.  Foods that are delicious, high in flavor, and refreshing.

On the Fourth of July, we were invited to enjoy a meal with some friends.

It’s always good to hang out with good friends and catch up on all the latest.  When one of those friends is a great cook, it makes that gathering even more special.

I love walking into a home where we’re expected for dinner and seeing a few beautifully presented appetizers and beverages.  It makes me feel wanted and anticipated.  Some people are so good at that.  Me?  I need to improve in the appetizer department.  But, I really appreciate it when others treat me to such delights.

This time, we were greeted with Raspberry Tea, Lemonade, and Watermelon Salsa with Tortilla Chips.  And for those who have a sweet tooth….you don’t know any of those types, do you?  There were the cutest watermelon cookies.  But, I’ll wait to share those with you later.

My friend saw this recipe for Watermelon Salsa, prepared by Rachel Ray, and decided to give it a whirl.  I’m so glad she did.

Spoiler alert!  This salsa contains the “C” herb.  Now I confess that I am not a huge fan of Cilantro.  It seems that this herb divides people into two camps.  The Love Camp or Hate Camp.

Mint is the additional herb in this yummy salsa recipe.  I think it mellows out cilantro’s bite.  I confess to having a few more pre-dinner bites than I really should have.  It was light, refreshing, and full of flavor.

I enjoyed it so much that not only did I take photos of this delightful appetizer, I got the recipe to share with you too.   Because I’m nice like that.  My friend tolerates my need to share goodness like this on the blog and printed out the recipe for me to share with you….because she’s nice like that, too.  Yeah, I’m blessed.  Good thing I brought my camera with me.  {wink}

Finally!! Here’s the recipe…

 

Watermelon Salsa from Rachel Ray

Ingredients

3 cups watermelon, cut into small dice

1 cucumber, seeded and cut into small dice

2 jalapenos, minced

1 small red onion, cut into small dice

1/4 cup cilantro, chopped

1/4 cup mint, chopped

Zest and juice of 2 limes

Salt and pepper

Yields: 1 bowl

Preparation

Combine watermelon, cucumber, jalapenos, red onion, cilantro, mint, lime zest and juice in a serving dish.  Season with salt just before you serve to keep the watermelon from extracting its juice.

Serve with tortilla chips or over steak, chicken, or fish.  Yum!

    Ohhhh…..I love salsa with a good corn tortilla! It’s actually one of those things that I *can* have that I really like! Nope, never heard of it made this way. But boy–I’m thinking I need to locate the mint so I can give it a go. And you’re right–ya either love cilantro, or ya notsomuch love it. Just a touch is what I go for–cuz I’m just not that huge of a fan. However, mixed with the mint, it might just do it!
    The photos alone made me want to have a go of it.
    Enjoy your holiday weekend, ma’am. Bit of a long one–but who doesn’t love a long weekend! 😉

      Maybe it’s time to grow mint in the garden. With a huge barrier around it! Haha! I had some that went wild over the winter and in my Michigan sandy soil and it took over. I had to dig out all the plants in that area and work the mint out of them. I love mint…but from now on it will be heavily guarded. LOL!
      And if you make the recipe and aren’t a cilantro fan…I would use a lot less. I might even try it without to see if it’s necessary. Yay! that you can enjoy corn tortillas. Have you ever purchased the “Garden of Eatin” organic corn chips? They are way way better than the typical store brands. They aren’t in my budget right now…because they do cost considerably more…but oh my!…they are sooo much better…it’s worth the extra $’s.
