It’s summer time and the livin’ is easy….or so the song goes.

One of my favorite summer time treats is a cool slice of watermelon.

Remember eating it as a little kid with the juice dripping down your elbows?    Yuuuuum!

A few weeks ago, I was enjoying a lovely inside picnic (thank you Mr. Thunderstorm) at my friend’s home and she served watermelon two ways.

One…an amazing Watermelon Salsa which I shared along with the recipe here.

And the second….Watermelon Cookies.

The kind that make your mouth water and one is just not enough.

Watermelon Cookies are soooo easy to make.  

All you need is a box of Watermelon Cookie Mix…a.k.aPillsbury Key Lime Premium Cookie Mix  (I am an Amazon Affiliate and this link has been added for your convenience.  I will receive a small commission for any purchase you make through this link. Thank you.)

You’ll also need: your favorite butter creme frosting, red food coloring, green food coloring, and mini chocolate chips.

 

Here’s what you do…

  • Make up the cookies following the recipe on the box, and add a few drops of food coloring to the mix to get your dough watermelon green.
  • Bake as directed.  While the cookies are still warm, cut them in half to form watermelon slices.
  • Once the cookies are cooled, frost them with your favorite white butter creme frosting to which you’ve added a few drops of red food coloring so that you’ll have a lovely watermelon pink.
  • Finally, add your watermelon seeds (mini chocolate chips).  Sprinkling them randomly on the frosted cookies.

That’s it!  Fun & Easy!

  9. I love cold watermelon. Having been born and raised on a farm, we would drop one on purpose and eat it right in the dirt. Never saw cookies or salsa made from them. Really looks tasty tho.
