Right inside the main door of my local Walmart I’m greeted with colorful signs of helpful mealtime suggestions. I love that when I’m in a hurry… I don’t have to walk the store… in a few steps I can pick up a Marketside Rotisserie Chicken Meal which includes a Rotisserie Chicken, a choice of Potato or Macaroni or Cole Slaw Side Salad, and a 2 Liter Coca-Cola product. Alone… that is a super easy supper to put on the table.

Easy Southwest Chicken Supper Ingredients

  1. Marketside Rotisserie Chicken
  2. Taco Seasoning Packet
  3. 24 oz. Salsa ~ I used Peach Pineapple Chipotle
  4. Bag of Tortilla Chips
  5. Bag of Shredded Mexican Four Cheese
  6. Container of Cole Slaw
  7. 2 Liter Sprite

Except for the rotisserie chicken, cole slaw, and Sprite, the rest of the items are generally pantry items in my house. Items I generally have on hand that can quickly be made into something tasty.

It’s a part of my meal plan to keep my cupboards and fridge stocked with ingredients like these.  I like knowing that with my pantry ingredients and Walmart’s Marketside Rotisserie Chicken Meal a tasty dinner can be on the table in a flash.

 

Let’s get dinner on the table!

Preheat your oven to 375 degrees.

Gather all the ingredients for the meal. (Rotisserie Chicken, Taco Seasoning Packet, 24 oz. Salsa, Bag of Tortilla Chips, Bag of Shredded Mexican Four Cheese, Container of Cole Slaw, 2 Liter of Sprite)

To start… we need to deconstruct the rotisserie chicken.  Don’t laugh, but I love removing the meat from the bones. TIP: As I pull the chicken off the bones I tear the chicken into small pieces with my fingers.  I don’t use a knife because I don’t want to get small pieces of bone or cartilage in my meal.  I have found that doing this without utensils works best. And while still warm.

Grab a large skillet or a small dutch oven for warming your chicken and seasonings and a stirring utensil.

Add a Tablespoon of Taco Seasoning to the chicken and mix it in well.

Add a jar of salsa.  I think that pineapple or fruit salsa pairs with chicken especially well.  But, you can use whatever you have on hand.

Stir in the salsa and warm the mixture over medium-low heat, stirring occasionally, until it starts to bubble.

While the chicken/salsa mixture is warming… place tortilla chips on a baking sheet and sprinkle shredded cheese over the chips.  You could skip this if you don’t have cheese on hand, but we love the addition of cheese on our chips melted in the oven.

Place the chips and cheese in the oven while you plate your Southwest Chicken.  We used small fruit bowls for serving the chicken… do whatever works for you.

The cheese should be melted by now.  Plate the chips and cheese too, or simply place the baking sheet of chips and cheese in the middle of the table on a hot pad.  But, careful! it’s hot from the oven!

Life is complicated and often we don’t get to spend as much time with our families as we would like.

My brother-in-law fiercely loves his kids and is a great daddy.  So, on the one school night that his kids are at his house, he wants to make the most of his time with them…. not the kitchen.

    My mom and dad would eat the rotisserie chicken from a local store one night and then the next day for lunch make our cousin’s recipe for chicken salad (chicken taken off rotisserie chicken–try to keep in larger chunks, slivered almonds, drained well,crushed pineapple, stalk or two of celery chopped to fine pieces and just enough mayo to moisten. Do not stir. Fold together to keep chicken in small pieces. Sprinkle with salt and ground pepper as needed. Serve with Hawaiian dinner rolls) this made for quick meals that pleased Dad with the original meal and my mom with the chicken salad!!
