Super Easy 7 Ingredient Southwest Chicken Supper
that will nourish your family and only take a tiny bit of your limited time to prepare.
My number one go-to ingredient for reducing cooking time has always been a rotisserie chicken. Walmart is making it even easier to put food on the table quickly with their Effortless Meals.
Right inside the main door of my local Walmart I’m greeted with colorful signs of helpful mealtime suggestions. I love that when I’m in a hurry… I don’t have to walk the store… in a few steps I can pick up a Marketside Rotisserie Chicken Meal which includes a Rotisserie Chicken, a choice of Potato or Macaroni or Cole Slaw Side Salad, and a 2 Liter Coca-Cola product. Alone… that is a super easy supper to put on the table.
A Marketside Rotisserie Chicken Meal along with 4 more ingredients will make up tonight’s delicious, yet effortless supper, everyone will LOVE!
Easy Southwest Chicken Supper Ingredients
- Marketside Rotisserie Chicken
- Taco Seasoning Packet
- 24 oz. Salsa ~ I used Peach Pineapple Chipotle
- Bag of Tortilla Chips
- Bag of Shredded Mexican Four Cheese
- Container of Cole Slaw
- 2 Liter Sprite
Except for the rotisserie chicken, cole slaw, and Sprite, the rest of the items are generally pantry items in my house. Items I generally have on hand that can quickly be made into something tasty.
It’s a part of my meal plan to keep my cupboards and fridge stocked with ingredients like these. I like knowing that with my pantry ingredients and Walmart’s Marketside Rotisserie Chicken Meal a tasty dinner can be on the table in a flash.
Since life is so busy… Walmart has two more Effortless Meal options waiting for you: Marketside Pizza Meals: 16″ pepperoni pizza or 16″ five cheese pizza and a 2 Liter Coca-Cola product OR Marketside Sandwich Meals: 6″ sandwich, bag of Kettle Brand chips, and a 16 oz. Coca-Cola product.
Let’s get dinner on the table!
Preheat your oven to 375 degrees.
Gather all the ingredients for the meal. (Rotisserie Chicken, Taco Seasoning Packet, 24 oz. Salsa, Bag of Tortilla Chips, Bag of Shredded Mexican Four Cheese, Container of Cole Slaw, 2 Liter of Sprite)
To start… we need to deconstruct the rotisserie chicken. Don’t laugh, but I love removing the meat from the bones. TIP: As I pull the chicken off the bones I tear the chicken into small pieces with my fingers. I don’t use a knife because I don’t want to get small pieces of bone or cartilage in my meal. I have found that doing this without utensils works best. And while still warm.
Grab a large skillet or a small dutch oven for warming your chicken and seasonings and a stirring utensil.
Add a Tablespoon of Taco Seasoning to the chicken and mix it in well.
Add a jar of salsa. I think that pineapple or fruit salsa pairs with chicken especially well. But, you can use whatever you have on hand.
Stir in the salsa and warm the mixture over medium low heat, stirring occasionally, until it starts to bubble.
While the chicken/salsa mixture is warming… place tortilla chips on a baking sheet and sprinkle shredded cheese over the chips. You could skip this if you don’t have cheese on hand, but we love the addition of cheese on our chips melted in the oven.
Place the chips and cheese in the oven while you plate your Southwest Chicken. We used small fruit bowls for serving the chicken… do whatever works for you.
The cheese should be melted by now. Plate the chips and cheese too, or simply place the baking sheet of chips and cheese in the middle of the table on a hot pad. But, careful! it’s hot from the oven!
Serve a delicious side salad… Cole Slaw is a perfect pairing to the Southwest Chicken.
Give thanks, fill up jar glasses with Sprite, and dig in!
Life is complicated and often we don’t get to spend as much time with our families as we would like.
My brother-in-law fiercely loves his kids and is a great daddy. So, on the one school night that his kids are at his house, he wants to make the most of his time with them…. not the kitchen.
It isn’t often the weather is so warm and beautiful on a school night. A last-minute decision was made to eat outdoors. When the meal is quick and easy to prepare there’s no stress in having everyone grab their plates to head outside. Plus, there are even more memories to be made by eating in the backyard on a school night.
The kids loved their easy to make Southwest Chicken and cheesy chips. And what kid, or adult, doesn’t enjoy the fun of finger foods… being able to scoop the chicken with the chips was a plus. Cole Slaw is a favorite food and Walmart Cole Slaw got two thumbs up.
Let’s face it… so much is vying for our time. There’s no question, statistics show the value of time around the table for parents and children. Getting there is the challenge. A simple meal prepared with a Marketside Rotisserie Chicken Meal from Walmart and a few pantry ingredients can make family dinners effortless and stress-free… giving our families the real face time we so desperately need.
While we prepared this easy to make Southwest Chicken for supper, dinner prep for the next night was already underway.
Because I am a believer in easy meals I couldn’t let all the chicken bones and skin go to waste. Instead, we popped all the remains from deconstructing the chicken into a crock pot, covered it with water, and started a rich chicken broth for another night’s supper. Soup is another quick meal. I always keep a package of soup veggies in the freezer and rice or noodles in the pantry. Together with a delicious rich broth made from the remains of the rotisserie chicken… supper can be on the table in a flash. And, I just might pick up an extra rotisserie chicken for the soup.
