How do you like to eat fresh picked blueberries?

When it’s blueberry season our family’s favorite blueberry food, aside from blueberry buckle coffee cake, is blueberry pancakes.  Or at least it was until I decided to make blueberry waffles.

The thing is, the stove in our apartment has the most uneven burners ever.  Everything slides to one side of the pan. Making pancakes on the stove is sheer craziness.  So when Tim suggested we make pancakes for our Sunday brunch I got all twitchy… until I remembered I have a waffle iron.

My waffle iron was purchased a while back for a hospitality post I wrote about waffles and honey, with a fun tutorial for a fabulous hostess gift.  After moving from the beach house to this apartment, it’s been sitting on the shelf ever since.  Well… at least until last Sunday.

The waffle recipe I previously shared was an adaption of one created by the Pioneer Woman.  It was very good, but the recipe involved whipping egg whites, the key to the lightness of that waffle recipe.  As wonderful as those waffles were…. I was not in the mood to whip egg whites until my arm fell off… so I did what everyone does for inspiration… I went online in search of a recipe for blueberry waffles.

Martha Stewart’s blueberry waffle recipe came up in the top ten and because I LOVE her biscuit recipe, I decided to give her waffle recipe a try.

As most days, Sunday it was just the two of us so I halved the original recipe and increased the amount of blueberries and tweaked it with a little vanilla.  It was perfect!!  We loved it.  Tim thought he was in blueberry heaven. This smaller tweaked recipe provided three large waffles… perfect for us as Tim enjoyed two and I savored a single waffle.

Generally we would put honey or pure maple syrup on our waffles, but because we had just been to the farmers’ market, I sliced up some fresh Red Haven peaches which I tossed with a little bit of powdered sugar to create a wee bit of syrup and topped the waffles with this amazing sweet peachy goodness, more fresh picked blueberries, and a sprinkling of powdered sugar.  Is your mouth watering yet?

 

Make Sunday Brunch Amazing with this Recipe for Very Blueberry Waffles

 

Very Blueberry Waffles Recipe


Ingredients

  • 1 cup Einkorn all purpose flour, spooned and leveled, plus 1 teaspoon for dusting berries
  • 1 tablespoon organic cane sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon Celtic seas salt
  • 1 cup low-fat buttermilk
  • 1/4 cup (1/2 stick) unsalted butter, melted and cooled
  • 2 small/medium eggs
  • 1/2 teaspoon vanilla
  • 2 cups fresh blueberries, plus more for serving
  • Nonstick coconut oil cooking spray
  • Fresh sliced peaches and confectioners’ sugar, for serving

 

Method

  1. Preheat waffle iron according to manufacturers instructions…. I set mine on high.
  2. Preheat oven to 275 degrees; set a rack on a baking sheet and place in the oven.  This really helps to keep the waffles warm and keep them from getting soggy.
  3. In a medium bowl, whisk together flour (the Einkorn flour is an ancient grain that is so much better for you and it is absolutely delicious), sugar, baking powder, baking soda, and salt; set aside. In a large bowl whisk together buttermilk, butter, vanilla and eggs. Add flour mixture to buttermilk mixture and stir just until batter is combined.  In a separate bowl, toss berries with 1 teaspoon flour; fold berries into batter.
  4. Lightly coat waffle iron with cooking spray. Pour 1 cup batter (this may vary depending on the size of your waffle iron) in the center of iron. Close iron; cook until waffles are golden brown and crisp, 8 minutes. Remove from iron and transfer to rack in oven; repeat with remaining batter.
  5. Slice two peaches which have been peeled (I float mine in boiling water for 30 seconds, remove from boiling water, run under cold water, and then the peel easily comes off.) and toss with a tablespoon of powdered sugar.
  6. Serve your hot blueberry waffles topped with lots of butter, sliced peaches, and fresh blueberries and a sprinkling of confectioners’ sugar.

 

We had a good rain, so I’m hoping that there are still lots of blueberries for picking.  We would love to freeze some to enjoy when the snow flies.

Blueberries just might be our favorite fruit.  Then again… we are crazy for peaches too.  And let’s not forget strawberry shortcake during strawberry season.  What’s your favorite fruit?
