Amazingly Delicious Chocolate Christmas Cookies - A Cup of Christmas Tea featured at AnExtraordinaryDay.net

 

If you put out a tray of Christmas cookies… the very first cookie I will look for is a chocolate one.  No exceptions.  I love chocolate and cookies are my favorite dessert.  So when I discovered a recipe for amazingly delicious chocolate Christmas cookies… I flipped. And I’m no gymnast!  These cookies are soooo good I’m also sharing them at a virtual Cookie Exchange with some of my fellow blogging friends.  Links to all their Christmas cookie recipes will be found at the end of this post.

The Christmas season is filled with so many memories in the making.  I don’t tend to dwell much in the past, but at Christmas I can get nostalgic.

For several years, my favorite Christmas book was A Cup of Christmas Tea.*

The story would move me to tears.

 

Amazingly Delicious Chocolate Christmas Cookies and a sweet story about A Cup of Christmas Tea

 

It was about a young man who went to visit his aging aunt at Christmas time.

She invited him in and offered him a cup of Christmas tea.

His aunt, despite her disability and age, baked Christmas cookies and completely decorated her home for Christmas.

He was amazed.  Even more than her delicious cookies… she blessed him by listening intently to hear every detail of his life.

I’m not quite sure why I was so smitten with that short storybook.

Maybe it was because my favorite aunt moved to Florida and I missed sharing the holidays with her. Maybe it was because my father loved every. single. thing about Christmas.  And even in his late years enjoyed decorating and seeing Christmas decorations.  Whatever it was… my heart was touched.

I’d like to think that when I grow old I’ll be like the dear old aunt in the story… still decorating and making a cookie or two. Hopefully,  amazingly delicious chocolate Christmas cookies.

This year, I only baked one recipe of cookies.  But, they are sooo good.

 

A Recipe for Some Amazingly Delicious Chocolate Christmas Cookies to Make Your Friends and Family Drool.

 

It’s the first time I’ve made Amazingly Delicious Chocolate Christmas Cookies a.k.a. Chocolate Crinkle Cookies.

One of my wonderful AED readers, Debbi, told me that they were her favorite and shared her recipe with me.  When I mentioned that I LOVE amazingly delicious chocolate Christmas cookies, she assured me her family requests them each year and they might possibly become my favorite, too.

They are every bit as good as she said.  In fact, they are at the top of my cookie list, now!

Yumm!!  They are so chocolaty and delicious with a nice chewy inside and a slightly crunchy outside.

They’re easy to mix up and bake… just perfect to go along with our peppermint Christmas cup of tea!

I don’t think anything could be better than a cup of Christmas tea and Chocolate Crinkle Cookies, except if I were enjoying them with you!

 

Chocolate Crinkle Cookies

Bake at 350 degrees

Ingredients:

  • 1 Stick of Butter, softened
  • 1 and 3/4 Cups Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Sea Salt
  • 3 Large Eggs
  • 1 teaspoon Vanilla
  • 4 ounces Unsweetened Baker’s Baking Chocolate Bar
  • 2 Cups plus 2 Tablespoons Flour

 

  • 1 Cup of Confectioners/Powdered Sugar

 

Method: 

  • Using a mixer, beat butter, sugar, baking powder, and salt until fluffy and set aside.
  • Break up the baking chocolate bar into pieces and place in a small sauce pan.  On low to medium low heat, melt the baking chocolate, stirring continually.   Once it looks like chocolate sauce…
  • Using your mixer, slowly beat in eggs, melted chocolate and vanilla into the fluffy butter/sugar mixture.
  • Slowly add flour to the mixture a small amount at a time, beating on low.  Note… your dough will get quite stiff and heavy.
  • Place cookie dough mixture in the refrigerator for two hours.
  • Remove from fridge and shape dough into 1 inch balls, approximately.
  • Place confectioners sugar in a low bowl and roll chocolate dough balls in the sugar to coat
  • On your parchment paper or  Silpat Non-Stick Silicone Baking Mat* covered cookie sheet, place 12-16 cookie dough balls spaced out evenly.
  • Bake at 350 degrees for 10-12 minutes depending on your oven.

 

Tips…

  • You can roll your cookies in advance, coat them in the powdered sugar, and store in a tightly covered container in the refrigerator until you’re ready to bake them.
  • These cookies would be delicious with the addition of peppermint extract.
  • I crushed peppermint candy canes and rolled their tops in the crushed candy.  They were delicious… but not pretty.

    Diane,that is a beautiful sounding story.I guess for me one sweet memory I have of my mom trying to make sure we had something for Christmas and she would go to our neighborhood store and ask for brand new small paper bags,they always were new ones.In those bags she would put an orange,apple ,a piece of candy and one nut.I have shared this with my kids and we have had a great time with the idea mama only gave us one nut.Im sure they were more costly than the fruit is the reason why but when I tried to break it with a rock if you hit too hard you lost the nut inside.(smile) Im the youngest of 12 so mama always had a tough time but what a grat memory for me.

    Hi Diane, You gave me my first copy of Christmas Tea and also the cup and saucer. I love the story so much. Just like you I had a favorite aunt too and even though I went there to encourage her I came away the one that was blessed!! Thank you for reminding us of that story and the true meaning of the holidays… Remembering those that are alone or just blessing those who are hurting..
